Crab Filled Cucumbers: Healthy & Delicious

I’m a Pinterest addict, as you already know, and am trying to use my Healthy Eating Pinterest Board to snag healthy recipe ideas! Since I LOVE cucumber, I couldn’t wait to make this recipe!

First, I bought two cucumbers, and peeled and cored them as shown above.

Then I mixed the following ingredients:

  • Green non-fat cream cheese- one 8oz. tub
  • 1 package of crab claw meat from Walmart (around $5.38).
  • 1/2 C of light sour cream
  • Old Bay to taste. I would recommend using at least a Tablespoon. I <3 Old Bay, so I used a lot more than that!
  • Salt and pepper to taste

You simply stuff the cucumbers with the crab dip for a super healthy summer snack or meal! I ate some for lunch on Saturday and then again on Sunday and I was totally full!

Ruby Tuesday DIY Mango Iced Tea


Iced Tea

I absolutely LOVE Ruby Tuesday’s Mango Iced Tea. So, I decided to try and make it myself at home! It was so easy!

Ingredients:

  • 4 bags of Lipton Decaf Tea
  • 1 Tbsp. lemon juice
  • 1 C sugar
  • 1 mango, chopped into small bits

Directions:

1. I brewed 4 large cups of water in my Keurig, but you can also brew by boiling 4 cups of water on the stove.

2. Add four tea bags, and let it steep for about 30 minutes.

3.Chop one mango into little bits while the tea is steeping.

4. Add  1 cup of sugar and 1 Tbsp. lemon juice, chopped mango, and ice.

You can change these amounts depending on your preference for sweetness!

Marriage: Ten Tips to Making It Last

This year I celebrated 15 years of marriage. There are very few things I’ve done for fifteen years in a row, so I do feel that I know a few things about staying married.  Each day I look in the newspaper, and the divorce column lists at least 4-5 couples that have decided to call it quits.  No one ever gets married expecting to find their divorce in the paper five, ten, or even thirty years later.  There are many ingredients to a healthy marriage, and we have ten tips today that will hopefully help you keep your love growing stronger everyday.

1. Don’t quit. This is my first and most important tip to give to any couple who wants to stay married. There will be times where you want to quit, give up, walk away, divorce, (maybe even contemplate murder- I’m totally kidding on this one- sort of!), etc.  This is a normal feeling to have at times in marriage, and you have to be willing to push past those feelings if you’re going to stay married.

Life does not bring any guarantees, and marriage is tough. If it wasn’t tough, they wouldn’t make you take a vow to stay married! However, life will throw curve balls like family issues, illness, money problems, varied goals, etc. These are all things that can make marriage seem long and arduous. However, if you allow them to be the sandpaper on your life, you will both become smooth stones eventually.

2. Change Your Attitude. I have a friend who only focuses on the negative in her marriage. “He never does this, he doesn’t do this, he won’t …..”  If this is your attitude, you might as well get off the marriage train before it starts. This type of attitude will NEVER make it to fifteen years.  You have to keep a positive outlook, and surround yourself with people who will help you have this positive outlook.  Many times I’ve had to walk away from friendships because a couple divorced and the partners had such a negative outlook about relationships that I had to end those friendships. It doesn’t pay to have others in your life who are going to drag you down. Stay positive and surround yourself with positive people.

3. Priority. Your marriage relationship should always be your number one priority. In our marriage we have always held our priorities as God, ourselves, our spouse, and our child – in that order. My hubby and I have always seen our marriage with God at the top angle, and he and I at the two bottom angles, working together towards God at the top as we grow.  There are so many things that can become a priority that overshadows marriage, and you have to be very careful to avoid these traps.

Things I’ve seen cause couples to get divorced when their spouse is not a priority:

  • Making work a priority over marriage.
  • Making family a priority over marriage.
  • Putting money ahead of the marriage.
  • Putting other relationships ahead of the marriage.
  • Putting selfish wants ahead of the marriage. (These are just a few examples).

However, if you see your marriage falling into one of these categories, that does NOT mean that you need to divorce or that your marriage is on the rocks. All marriages go through dry, rough spells. The key to staying together is to never quit or give up!

 4. Accept Them.  It wasn’t until I had been married for about ten years that I realized I there were things about my spouse that I might never change.  I couldn’t believe how freeing it was when I figured out that I could love my husband for who he was, and it was ok that he wasn’t ever going to be a “prince charming.” The point was, he was my prince charming, flaws and all, and I needed to put on my love goggles so that I could focus on all the positive things about him! This also helps get rid of any negative thinking about your spouse!

5. Pray for Them. I have actually found myself face-down on the bedroom floor more than once crying out to God about my spouse.  These were some of our darkest days, and during those times, I couldn’t see how we could make it. However, God can take two very imperfect people and show them how to love unconditionally. During my times of prayer, I could hear from God and see things about my spouse that I couldn’t see at other times.

6. Don’t Flirt with Danger. It can seem so innocent at first. I’ve had several personal friends who had extremely inappropriate behavior with others, and once even led to the birth of a child from an affair.  These situations are tough, but please DON’T BE DELUSIONAL.  Anyone can fall into the temptation of cheating.   Everyone has a moment or two in life when a good looking stranger walks into a room. For a second, you can picture an entire life you could have. However, the truth is that those thoughts are delusional. That relationship will still need cared for and will require just as much work if not more than the one you are already in with your spouse. It’s NEVER worth it.

7. Grow Together. I married my husband at 20, and I was a totally different person now than I was then.  You may wake up one day and realize that you and your spouse have both changed into different people. However, don’t fear! That means that you learn to love each other for who you are now all over again. Make a list of all the things you love about your spouse now, and you will quickly see that your spouse still has awesome qualities, and maybe even has some new ones!

8. Look in the Mirror. I’m adding this tip because there are a select few people who are not able to step outside of themselves and see themselves for who they really are in reality.  Are you a spouse that constantly finds fault in your significant other. Do you constantly put them down? Do you think they need to change? I’m going to challenge you today. Maybe you need to be the one who changes first? Marriage is like a dance. If you step forward, and your spouse is used to you stepping back, it will take a few dance moves, but eventually your partner will see that your not moving in that direction anymore. Are you sarcastic? Stop it. Do you mention his/her weight? Stop it.  Sometimes you need a wake up call that maybe YOU are being the jerk (I can say that, because I’ve been there.).  Looking in the mirror is the first step in effective change, because you can only change yourself.

9. Laugh. Often.  One of my husband’s greatest qualities is his laugh.  His laugh still makes me laugh, even from across a room. We like to kid, joke, and have fun. Sometimes you need to lighten up to remember why you loved someone in the first place. If you’re too busy focusing on the negatives in your marriage, then you’re not HAVING fun! Just remember, your version of fun may be different from theirs, so do something that THEY would think is fun.

10. Forgive. While this should be one of the first tips, I saved it for last because it’s like fine wine. It gets better as you grow older. When you know that your married to someone who can forgive your mistakes, you know you’ve found a partner for life.  Staying married is going to require a lot of forgiveness, because we all make mistakes. No one is exempt, and if you’re narcissistic enough to believe that your perfect, then you need more than this article to help you.  I am so thankful that I have a spouse who can love me for who I am, and forgive me when I’m wrong. This is why I know we’re meant for each other.

Check out this amazing dessert my friend Amy brought to our house this weekend! Of course I had to ask her for the recipe so I could share with our readers! I was telling her about how I just bought my first trifle dish a few weeks ago, and I’ve been pinning as many trifle recipes as I can find! So, I was ecstatic when she walked in the door with this one!

Chocolate Banana Trifle

Serves: 6
 

Ingredients
  • -1 box chocolate pudding
  • -3 bananas
  • -1 tub of original cool whip, thawed
  • -1 package of Oreo Cookies (You will need 10 cookies to make the topping)
  • -1/2 C sour cream
  • -milk (to make pudding)
  • -lemon juice

Instructions
  1. Cut bananas into slices, and soak in lemon juice for about 20-30 minutes to keep them from turning brown.
  2. Prepare chocolate pudding as directed.
  3. Add ½ C sour cream (You don’t have to add the sour cream if you don’t like it).
  4. Layer bananas, pudding, and whipped cream in trifle bowl.
  5. Top with crushed Oreo cookies and bananas

TEACH YOUR CHILD TO READ!

As a Reading Specialist (My day job! :) I find that many parents let children fall back in reading skills over the summer. We’re going to show you some fun, neat, and super inexpensive ways to keep your child engaged in reading all summer long and TEACH YOUR CHILD TO READ! Many parents have the misconception that reading has to be sitting at a desk/table and be totally boring, and this is NOT the case!  We’ll show you how to make reading fun for your kiddo!

Why Sight Words are So Important

1. Play games. Reviewing reading skills and learning new skills by playing games is a GREAT way to engage your child without the learning appearing as “work.” You can find some FREE printable gameboards HERE! These games can include sight-words (Learn more about sight words HERE).   I LOVE using the Mrs. Perkins List of sight words, and you may need to print these lists off and see which ones your child knows first before you can create the game. However, once you have your list, include those words on the gameboard, grab your dice and pawns, and get busy playing!

Another game for learning words/sight words is memory. This is SO easy to make. You only need a list of words, index cards, and a pencil (Don’t use marker, because it will show through and that will definitely spoil the game!).  However, this can be used for word families and sight words.

2. Take advantage of a captive audience. Travel and bedtime are GREAT times to implement reading activities.  As you can see the picture above, we bought our son his own headlamp just so we could read under the covers! When we’re traveling we always play a game of making words out of road signs. For example, if we see “an” in “Grant Street,” we say “I made a word!” and share our word with the group.  This can be as easy as finding early reading sight words, or as complicated as making new words out of signs or seeing how many words you can make out of a sign. McDonalds has sad, sand, so, land, lands, etc.

This is also a great time to read aloud to your children (as long as you don’t get motion sickness).  We will talk more about read-alouds in the next point!

Spatula/Fly Swatter Game Write the words your child is learning on index cards, and turn them over.  Have hubby or an older brother or sister join in the game, by each holding a spatula or fly swatter. You call the word, and whoever hits it with their spatula/swatter first gets one point! Add these points up at the end of the game and see who wins (We play this with my son ALL the time, and hubby throws the game each time so that we can cover more words!).

3.  Read aloud to your children. Sometimes parents have the misconception that their child has to do all the reading. There should be a healthy mix of the two, and reading aloud to your children can happen many different places. This can happen while travelling in the car, at bedtime, and while children are playing (as long as there are no other noises around).  I like to read to my son at bedtime, because he’s a swirl of motion during the day, and at bedtime he’s tired enough that I can have a captive audience!  This is also a GREAT time to read your child a book that he/she is interested in, but is too hard to read by him/herself.

There is a book called the Read Aloud Handbook for Children by Jim Trelease that is a GREAT way to help you learn how to read aloud to your children (even if they’re older!).

4. There’s an app for that. With all the technology available, you can DEFINTELY engage your child in MANY, MANY activities for reading via the iPhone, Android Phone, iPad, etc.  In fact, many times you can find FREE apps for practicing skills! For older children, let them play their own game of “Words with Friends.”  My son loves the Kindle, and so there are free apps for the Kindle as well that help engage kids in reading. There are also Kindle books that come through FREE for kids as well! (We have a daily Kindle Freebie list on Debt Free Spending that often includes children’s books).

5. Take advantage of rainy days. When there’s no sun, there’s no swimming, so head into your local bookstore or library. I LOVE taking my son to our local library because it is so inviting for kids. There are fairy tale characters painted on the walls, and they have bean bag chairs and other comfy places to read. However, the larger book chains also do a great job with making the childrens’ area very inviting! Both places usually have summer reading activities, which kids usually love as well!

6. Use free online resources. There are SO MANY web resources that are free, that google brings you millions of sites available with free printable activities as well!  Some of my favorites are Starfall, PBS Kids, & Scholastic.

7. Use a Dry Erase Board. This is one of my favorite interactive writing tools, and it’s easy to use and portable! We use our dry erase board to learn new words and skills, and we use it to play word games. Hangman is one of our favorites.

8. Writing to Read. My son just finished Kindergarten, and he LOVES to write because his teacher implemented the Kid Writing program into his classroom. He has been asking me if he can write in his journal most days, so I consider this a wonderful thing, since he is a boy! Kid Writing has taught him to love to write, and I’m so grateful that his teacher instilled this love in him. However, it’s an added bonus, because learning to read and learning to write a partial reciprocal processes! So, learning to write helps him read and vice versa!

Therefore, we have TONS of markers, writing implements, writing paper, journals, notebooks, and more for him to access when he’s in a writing mood. He has cool “kid” pens and pencils and I even have a journal like his Kid Writing journal where he can draw a picture and then write his story underneath.  This Mead MEA09956 Primary Journal K-2nd Grade is a perfect example of one you can use for primary children who can’t write on smaller lines yet. If you have an older child, there are LOTS of neat journals you can buy!

Mother’s Day Generation Necklace #mommatters


Mothers Day Generation Necklace My mother is an amazing woman, and so is my grandmother. Both were single mothers who had to raise their child alone. My grandmother was so excited to come home and tell her husband she was going to have a baby after years of trying, only to find out he was leaving her for another woman that very day. My mother was a single mom who fell in love again, only to have the love of her life killed in a tragic car accident. My family knows tragedy, but we also know triumph. The women in my life know what it means to overcome, and to be strong.

This necklace represents four generations. My grandmother, my mother, me, and my son – and our birthstone colors. This necklace means so much to me, and I’m making one for my mother and grandmother as their Mother’s Day gifts. This could also just be made out of the birthstones of each child for one mother. Generations Necklace How To:

Supplies:

-fishing line

-crystals representing the color of each birth stone (3-4)

-Sterling silver post

-Sterling silver clasp with hook

-Crimping beads (large enough to fit fishing wire through 2 times

-Wire cutters

-Needle nose pliers

 

Directions:

1. Place crystals on post.

2. Snip post with 6-7mm of wire that you will roll with needle nose pliers to make a loop at the top.

3. Run fishing wire through hole at end of crystal post.

4. Take a measurement around your neck to make sure the length is appropriate.

5. Attach end clasps to fishing wire by tying knots or using crimping beads.

Healthy Choices Mean Healthy Living #HealthyChoices


Getting healthy can often seem like a daunting task. However, technology is definitely helping to make this much easier. I’m so excited to share our healthy lifestyle changes with our readers. My husband and I are embarking on a new lifestyle, and we’ve been slowly making changes over the last three months to become healthier. We want to share our journey with you in hopes that it will help others make healthy lifestyle choices.

This journey started in January, when I received a FitBit to review from BestBuy! This is an electronic pedometer that measures our steps (like a pedometer), sleep, and even acts as an alarm clock! I had no idea all of the technological advances that could help us with weight loss, and many of them FREE! Shortly after we started tracking our steps, we decided to visit our hospital’s weight management center.

It was during our initial visit that the physician told me that my BMI was actually ok, and that I wasn’t overweight, just on the upper end of the normal range. However, my hubby had some work to do.  He needed to lose a little over 100 pounds. This was very important to us, since he already has a heart condition.

The second step was to begin an exercise program. I tend to be more driven, so I am able to work out 3-4 times per week at home without any accountability. Hubby has a more laid back personality, so we decided that it was better for him to meet with a personal trainer at our local gym.

We also found out that the FitBit also syncs to my iPhone and the FitBit app.  However, it ALSO syncs to the FREE My Fitness Pal app! This app is amazing, and also allows me to scan barcodes from food with my phone. It automatically enters the nutritional info, including calories directly from the barcode scan! I just enter how many servings. It is SO easy! So, between tracking our calories and exercise, hubby has been able to lose over 10 pounds. Because I have a stomach condition, my goal right now is to maintain my weight and get more in shape versus losing weight.

Our next step is to see a dietician who will help us plan healthy meals, and help me navigate my many food intolerances. While I don’t have Celiac disease, I’m extremely lactose intolerant, and have been diagnosed with IBS and endometriosis (being a woman is so much fun, isn’t it?! LOL).   I’ll definitely share more after we see the dietician in a few weeks! We’re also focusing on drinking more water and implementing healthier cooking practices before we see the dietician.

Asparagus Stuffed Chicken

Ingredients
  • -Chicken breast (sliced in thin halves). One breast will make enough for two guests
  • -Goat Cheese (small container)
  • -Asparagus (small bundle from produce section)
  • -Small package of Proscuitto (enought for 2 bacon-size slices per breast)

Instructions
  1. Slice chicken breasts in half and pound with a meat tenderizer.
  2. Steam or broil broccoli.
  3. Lay out chicken breasts and get ready to roll! Fill with 2 Tbsp. goat cheese, 2 slices of Proscuitto, and 2-3 stalks of asparagus.
  4. Bake in 350 degree oven for 40 minutes (or until completely cooked).

How to get the BEST deal on Toilet Paper!

Before we get started at looking at the best way to get the best deal on toilet paper, we need to start out by asking a question. “What can I live with, and what can I live without?” My hubby hates the commercial where two bears are always showing their bums, and I have to laugh, because I think most people DO have a preference when it comes to toilet paper. Therefore, you have to make a decision about your preferred texture for toilet paper.

 

If you have an anything goes attitude, you will probably get the best deal! For those who are brand specific buyers, then we need to look at maximizing the deal price on your specific brand.  Another factor to consider is what can your toilet handle? If you have a clog every week, then you may want to consider switching to a less fluffy brand.  Because costs, texture, and sizes of rolls vary, we are going to look at how to determine a “deal” for toilet paper.

Determine the price for square footage.  The amount of square footage in a pack is located at the front bottom corner or most packages. (As shown in the photos below).

The first package had 16 rolls and 334 sq. feet.

The second package had 12 rolls and 284.6 square feet

Now, to figure out if you getting a good deal! Move the decimal point two places to the left. If I pay around $3.34 on the first package, that’s a good deal! If I pay $2.84 for the second package, that’s a good deal!

My “best price” for toilet paper is $0.01 per square foot, and this is just an easier way to figure out the price for $0.01 per square foot! Remember to use coupons in combination with store sale prices to get as close to this price as possible.  If you can get close to these prices with deals and coupons, you are getting a GOOD deal!

Girls in White Dresses (blogger) actually did a square footage comparison in the store you may find helpful also!  She researched seven different brands and found the following square footage prices:

USPS Stops Saturday Mail Delivery


The United States Postal Service has announced it will no longer be making saturday mail deliveries starting on August 1st, 2013.  While they will still be dropping off packages, they will not be sending mail.  ABC News wrote that congress is still not sure how they can stop delivery without congressional approval. However, it looks as though this is most likely to happen!
