Breakfast Egg Casserole

Ingredients
  • 5 eggs
  • ½ cup milk
  • 3 cups of frozen hashbrowns, thawed
  • ⅓ c. greens onion, sliced
  • ½ tsp salt
  • 1½ cups mild cheddar cheese
  • 5 slices bacon
Instructions

  7. /2 cups mild cheddar cheese

  9. Cook and crumble bacon. While that’s cooking, stir together eggs and milk. Stir in the hashbrowns, green onion and salt. Add one cup of the cheese and 4 slices of the bacon and pour into a 9 inch greased pie plate. Bake at 350 degrees for 30-35 minutes, until casserole is set and doesn’t wiggle when shaken a bit. Sprinkle with remaining bacon crumbles and cheese and bake an additional 5 minutes. Cut into wedges and serve - will serve six people.
