Crab Filled Cucumbers: Healthy & Delicious

I’m a Pinterest addict, as you already know, and am trying to use my Healthy Eating Pinterest Board to snag healthy recipe ideas! Since I LOVE cucumber, I couldn’t wait to make this recipe!

First, I bought two cucumbers, and peeled and cored them as shown above.

Then I mixed the following ingredients:

  • Green non-fat cream cheese- one 8oz. tub
  • 1 package of crab claw meat from Walmart (around $5.38).
  • 1/2 C of light sour cream
  • Old Bay to taste. I would recommend using at least a Tablespoon. I <3 Old Bay, so I used a lot more than that!
  • Salt and pepper to taste

You simply stuff the cucumbers with the crab dip for a super healthy summer snack or meal! I ate some for lunch on Saturday and then again on Sunday and I was totally full!

Ruby Tuesday DIY Mango Iced Tea


Iced Tea

I absolutely LOVE Ruby Tuesday’s Mango Iced Tea. So, I decided to try and make it myself at home! It was so easy!

Ingredients:

  • 4 bags of Lipton Decaf Tea
  • 1 Tbsp. lemon juice
  • 1 C sugar
  • 1 mango, chopped into small bits

Directions:

1. I brewed 4 large cups of water in my Keurig, but you can also brew by boiling 4 cups of water on the stove.

2. Add four tea bags, and let it steep for about 30 minutes.

3.Chop one mango into little bits while the tea is steeping.

4. Add  1 cup of sugar and 1 Tbsp. lemon juice, chopped mango, and ice.

You can change these amounts depending on your preference for sweetness!

Check out this amazing dessert my friend Amy brought to our house this weekend! Of course I had to ask her for the recipe so I could share with our readers! I was telling her about how I just bought my first trifle dish a few weeks ago, and I’ve been pinning as many trifle recipes as I can find! So, I was ecstatic when she walked in the door with this one!

Chocolate Banana Trifle

Serves: 6
 

Ingredients
  • -1 box chocolate pudding
  • -3 bananas
  • -1 tub of original cool whip, thawed
  • -1 package of Oreo Cookies (You will need 10 cookies to make the topping)
  • -1/2 C sour cream
  • -milk (to make pudding)
  • -lemon juice

Instructions
  1. Cut bananas into slices, and soak in lemon juice for about 20-30 minutes to keep them from turning brown.
  2. Prepare chocolate pudding as directed.
  3. Add ½ C sour cream (You don’t have to add the sour cream if you don’t like it).
  4. Layer bananas, pudding, and whipped cream in trifle bowl.
  5. Top with crushed Oreo cookies and bananas

Healthy Living: Losing Weight with Healthy Choices @Healthy_Choice #HealthyChoices



We’re so excited about our latest post in our Healthy Living series! As we mentioned in our Healthy Choices Mean Healthy Living post, hubby is down 10+ pounds, and we’re continuing to work out 2-3 times per week! We’ve definitely increased our water intake this week, and we made it over the Easter hump (this means all of our leftovers are gone!).  Now we’re refocused, and had a chance to create a new healthy foods shopping list.  We were also able partner with Healthy Choice to test two of their new amazing products that we want to tell you about! Pre Shopping Prep

Remember how we told you about our trip to the Weight Management Center at our local Health Center? Well, one of the main things our physician told us was that preparing healthy foods is a cyclical process. First you have to plan a healthy meal, then you have to gather the ingredients. This is followed by purchasing needed ingredients, then preparing the food, and finally cooking the food! There were 5-6 steps between just thinking about what you wanted to eat and actually eating it!

 

We agreed that this was one of our toughest areas, because I don’t exactly love to cook. Hubby loves to cook, but not always healthy foods. So, we needed a compromise for those nights when you’re in a rush. We have karate two nights a week, and hubby is still going to the gym to meet with his trainer 2 nights a week. So, we needed a quick solution for those nights that wouldn’t break our budget. This is why we were so excited to try out two new Healthy Choice products!

We headed out to Walmart to check out the Healthy Choice selections, and knew we needed items that suited our taste buds, and that were quick to prepare. We decided to try their Top Chef Meals, and went with the Chicken Linguini with Red Pepper Alfredo.  We also wanted something for dessert, so we choice the Healthy Choice Strawberry Greek Yogurt as our something sweet! These also come in 100 calorie portions, which was perfect for tracking our daily calorie intake with our FitBit/My Fitness Pal app we told you about in our last post in the series!

Of course, we couldn’t wait to try all the new products, so for dinner that evening we taste-tested the new dinner and the frozen yogurt for dessert. We were very excited at how easy it was to make the meal, which you literally microwave, stir, and serve! Three simple steps (this is where I will be telling our doctor that some nights, three steps to preparing the meal is all you need!) was all this meal required.

Of course, we were anticipating dessert, and I am telling you that I’m 100% sold on the Healthy Choice Greek Frozen Yogurt. It was creamier than ice cream! I am not kidding! I could not believe how creamy it was, and only 100 calories, plus it was Greek Yogurt! As you can see below, we’ll definitely be using Healthy Choice as part of our weight loss menu plan!

Chocolate Birds Nest 2

Serves: 5
 

Ingredients
  • ½ cup semisweet chocolate
  • ¼ cup peanut butter
  • 1½ cup small chow mein noodles
  • 15 small chocolate or malted egg shaped candy

Instructions
  1. Melt chocolate and peanut butter together
  2. Add chow mein noodles and stir to combine- if the mixture looks too loose, add some more noodles
  3. Divide mixture into five parts and spoon onto parchament paper
  4. Shape into nest
  5. Put little chocolate or malted eggs into nest
  6. Let the chocolate set for about 30 minutes.

Cherry Whipped Delight We had this at my in-laws the other evening, and it is such a light, refreshing dessert! I just had to share it with our readers!

Cherry Whipped Delight

Serves: 4-6
 

Ingredients
  • -1 can of cherry pie filling
  • -1 can of crushed pineapple (drained)
  • -1 tub of Cool Whip
  • -1/2 tub of vanilla yogurt (1/2 of the large tub)
  • -chocolate for chocolate shaving topping

Instructions
  1. Blend Cool Whip and vanilla yogurt in mixing bowl.
  2. Fold in other ingredients.
  3. Chill and serve

Asparagus Stuffed Chicken

Ingredients
  • -Chicken breast (sliced in thin halves). One breast will make enough for two guests
  • -Goat Cheese (small container)
  • -Asparagus (small bundle from produce section)
  • -Small package of Proscuitto (enought for 2 bacon-size slices per breast)

Instructions
  1. Slice chicken breasts in half and pound with a meat tenderizer.
  2. Steam or broil broccoli.
  3. Lay out chicken breasts and get ready to roll! Fill with 2 Tbsp. goat cheese, 2 slices of Proscuitto, and 2-3 stalks of asparagus.
  4. Bake in 350 degree oven for 40 minutes (or until completely cooked).

Ingredients
  • (2) 12 pack packages of marshmallow bunny peeps
  • (2) 11.5 oz. bag of Chocolate morsels
  • chopped nuts or coconut
  • ¼ C vegetable oil

Instructions
  1. Heat chocolate in double boiler.
  2. Stir in vegetable oil.
  3. Once chocolate is fairly thin, dip peeps (On kabob skewers) in chocolate.
  4. Allow to cool on wax paper.
  5. Place in fridge and remove 1-2 hours before serving.

IMG_1650We’re SO EXCITED it’s Easter time again!! We love marshmallow Peeps and couldn’t wait to share our ideas and yummy peep recipes with you! You know we love Pinterest and we couldn’t resist trying out these ideas ourselves!

 

First, we made this Peep Centerpiece since we are cooking for 30 this Easter and really wanted to wow our guests with a Peep theme throughout the day!

How to make a Peep Centerpiece:

Supplies:

  • glass square or rectangular vase (ours was about 5 inches on each side)
  • 1 11oz. bag of jelly beans (or larger)
  • 12 pack of marshmallow Easter Bunny peeps
  • 1 8oz. glass or plastic cup
  • real or artificial flowers (your choice)

Directions:

1. Place 8oz. glass or cup inside of glass vase (this is where flower stems will go).

2. Fill the area outside of the glass with jelly beans.

3. Put a grouping of four marshmallow bunnies around each side of the vase (You may need to squeeze these in if there’s not a lot of room).

4. Arrange flowers into glass inside of vase.

3 Ingredient Peanut Butter Cookies


If you haven’t yet, you need to try this!! THREE easy ingredients and you are on your way to the most amazing peanut butter cookies. And as an added benefit, they are gluten free!! That’s actually how I found about this recipe. My oldest daughter has celiac disease. I’m always looking to keep food simple, but still delicious!
Ingredients:
2 cups peanut butter
2 eggs
2 cups Sugar

Directions:

1. Preheat oven to 350*

  2. Mix ingredients well, until smooth

      3. Drop spoonfuls of batter onto a greased cookie sheet and bake for about 10-12 mins

    Try not to over bake. These cookies are amazing when they are still a little soft!

Weekend Breakfast Burrito

Ingredients:

Package of flour tortillas, any size

Sausage patties

Any frozen (or leftover!) potatoes

Shredded Cheddar Cheese

Eggs

Salt & Pepper to taste

Salsa, optional

Directions:

Cook sausage patties and break into pieces, add warmed potatoes of any kind. Whisk as many eggs as you need, add a little milk, salt & pepper, & add to sausage & potato mixture. Scramble & keep warm.  Heat skillet and warm tortillas. Add mixture, salsa, & roll!  Kids love them! Enjoy and have a great weekend!

Cheap Eats by E! Happy Valentine’s Day!


Love Me Marinade (for steak or chicken) 

Ingredients:

(1) Cup Olive Oil

(1/2) Cup Balsamic Vinegar

(1-2) Cloves Minced Garlic, to taste

(1) Tbsp Dijon Mustard

Salt & Pepper to taste

Easy Directions:

In a large ziploc bag, combine all ingredients and marinate either a good piece of steak, any cut of beef, or chicken breasts, tenders, legs, or thighs.  Pan cook, bake, or broil – any way you want!  Marinate minimum of 30 minutes up to overnight.  ENJOY!

Easy Cheesy Shepards Pie

(1) lb.  ground beef

(1) Can cream of mushroom soup

(1) Frozen bag of Oreida mashed potatoes

(1) Can sweet corn

(1 1/2) Cups shredded cheddar cheeese

Garlic powder, Onion Powder

Salt & Pepper, to taste

Directions:

Preheat oven to 350 degrees.  Brown ground beef & drain.  Microwave frozen mashed potatoes.  In a baking dish, mix ground beef and cream of mushroom soup.  Pour canned corn on top of mixture and spread over beef.  Sprinkle garlic powder, onion powder, salt, & pepper.  Layer mashed potatoes on top and sprinkle with shredded cheddar cheese.  Bake for about 25 minutes until heated through and cheese is melted.

Suggestions: 

  1. Serve with cornbread & honey butter (add 2 tbsp honey to softened butter & mix thoroughly)
  2. Great meal to make ahead, freeze, but bring to room temp before baking.

Easy Chicken Pot Pie

(1) Large Bone-in Chicken Breast

(2) Bone-in Chicken Thighs

(1) Small onion, diced

(2) Medium carrots, diced

(1) Cup mushrooms, diced

(1) Cup frozen peas

(1) Cup frozen corn

(1) Can Cream of Chicken Soup

(1/2) Cup Sour Cream

(2) Tbsp. Butter

(2) Sheets Pillsbury Refrigerated Pie Dough

Salt, Pepper, Garlic Powder to taste

Directions:

In a large pot, boil chicken breast & chicken thighs until cooked through. Remove, cool, & shred. Meanwhile, saute diced onions, carrots, & mushrooms in butter. Add salt, pepper, & garlic powder to saute pan with vegetables. Microwave the frozen peas and corn in 1/2 cup of water and drain.  Combine can of cream of chicken soup & sour cream in small bowl.  Mix chicken, onions, carrots, mushrooms, & with the chicken soup/sour cream mixture.  Line a medium size pie plate or baking dish with one sheet of refrigerated pie dough.  Add chicken & vegetable mixture and then cover top with one sheet of pie dough. Trim excess dough as needed.  Cut small slits on top to allow steam to escape.

Bake at 350 degrees for 30 minutes or until top is light brown. 

Suggestions: 

  • Serve with a light green salad.
  • Save chicken broth, add celery salt,black pepper, garlic salt, and onion powder.  Let cool and freeze for a future chicken broth for soups, etc.
  • Great make a head meal, bring to room temp and freeze.  Remove from freezer & bring to room temp, bake as directed.
